All the regular Word formatting options are available. Just click and drag to highlight the text you want to change (or click Find & Select then Select All to do it all at once) and use the font list to change the font type, size or color.

Where is a template for a plain, horizontal business card that I can design myself?

You have far too many useless (to me) templates and I can't find the one I want. I want to design a card with text and a small graphic of a phoenix.
